The Spruce Camp Story

There’s something great about preparing fish to eat that you caught yourself, right?  After a salmon fishing trip to Alaska’s Kenai peninsula several years back, that’s what I did.

Our story

How We Got Started

I marinated, basted and dry rubbed. I grilled, baked, poached and smoked.  Friends and family shared the bounty but, full and happy, eventually put their hands up and said, “no mas.”

One recipe stuck though.  I cut fillets into strips and marinated them in a mixture of soy sauce, honey and spices.  The jerky was good but a little too salty and smoky.  It evolved.  We tasted, tested and tweaked.  I became a beekeeper along the way and found that adding more raw, wildflower honey was a good move.

I discovered the recipe was right in the middle of an Ultimate Frisbee tournament. My teenage son shared a zip-lock of salmon jerky with a teammate looking for an energy boost mid-game.  The kid loved it, called it “mind-blowing.”  Hyperbole?  Maybe, but it is darn good and more than one person has put out their hand for seconds.

What’s not to love?  Natural, healthy, tasty and super easy clean energy.  In a way, Spruce Camp Provisions was started to create healthy addictions!  I hope you try our salmon jerky and love it.
