Vermont Forest Fire Pecans – A Vegan Recipe
RECIPE: Spicy, roasted pecans glazed with maple syrup.
2 lbs pecan halves
1/2 cup Earth Balance vegan butter
1/2 cup VT maple syrup
2 tsp cayenne
1 tsp salt
Preheat oven to 325 degrees. Empty pecan halves into large mixing bowl.
Melt vegan butter in saucepan over med/low heat. Add syrup and spices. Stir continuously while simmering for two minutes.
Pour melted mixture over pecans. Mix gently and thoroughly.
Pour coated pecans onto two rimmed cookie sheets. Cook for 20 minutes. Remove and empty onto folded paper towels to air cool for one-half hour.
